Scrumptious Pecan Crusted Pork Chops

You may or may not be familiar with the fact that pecans have the super- power of enhancing the flavor of whatever they are paired with. If this is your first introduction to that particular super-power, then you are in for a real treat.

Contrary to popular tradition, pecans make a very nice addition to savory dishes, as well as sweet dishes. And given their natural composition, pecans add a nice texture, either crunchy or buttery, depending on preparation method, and this particular dish is somewhere in between.

Why I Love this Recipe:

  1. It’s different. It’s not another pecan pie recipe. It’s a cool new way to add flavor and nutrients to dinner, which I’m always a fan of.
  2. It’s simple. This recipe literally only uses 6 ingredients, all of which are traditional pantry staples.
  3. It’s customiz-able. I used honey mustard for a sweet-tang, but you can easily switch things up by using your favorite spicy-brown or dijon mustard.

Recipe:

  • 1.5 pounds of boneless pork chops (I used thick-cut)
  • 1/3 cup honey mustard (again, you can use your favorite spicy-brown or dijon for a more savory eating experience)
  • 1/4 cup milk
  • 1 egg
  • 2/3 cup midget or small pecan pieces
  • Pecan oil for frying


Directions:

  1. Preheat oven to 350*F.
  2. In a skillet, heat pecan oil to medium heat. (I used a cast iron because I love the added flavor, but any skillet will work).
  3. In a bowl, whisk together egg and milk. Set aside.
  4. With the mustard, coat one side of each pork chop.
  5. After each pork chop has one side coated, dip each chop first in the egg and milk mixture, and then coat with pecan pieces. Be sure to press the chop into the pecans to ensure a solid and complete coating.
  6. After the chops are coated, transfer them to the skillet. Brown each side for 1-2 minutes, paying close attention not to scorch the pecans. This step adds flavor and a golden color.
  7. Place the chops on a pan and transfer to the oven to finish cooking, about 20 to 25 minutes, depending on the pork chop thickness.
  8. Once removed from the oven, let set for 5 minutes prior to serving to ensure the juices stay in the pork and don’t leak out.
  9. Serve over a bed of greens for a light dinner or serve with your favorite potatoes and steamed veggies for something a little heartier.
