It might sound a little sappy, but I don’t think it can be beat. So allow me to introduce you to a beautifully gift-able and enjoyable bread recipe: Lemon Blueberry Pecan Loaf.

Recipe:
- 1 Stick Butter
- 1 Cup Sugar
- 2 Eggs, room temperature
- 2 Tablespoons Lemon Juice
- 1 Teaspoon Vanilla
- 1 5.3oz Container of Greek Yogurt (I used Blueberry, but feel free to use Lemon, Vanilla or Plain)
- 1 ⅓ Cup Flour
- ⅓ Cup Farm Fresh Pecan Meal
- ½ Teaspoon Salt
- ¼ Teaspoon Baking Soda
- ⅓ Cup Farm Fresh Pecan Pieces (I used Large Pieces)
- ½ Cup Blueberries (I used frozen, but you can use fresh)

For Icing:
- ½ Cup Powdered Sugar
- 2 Tablespoons Lemon Juice
Directions:
- Preheat oven to 350℉.
- In a mixing bowl, cream together butter and sugar. Mix in the eggs one at a time. Add the vanilla, lemon juice and yogurt. Cream together only until combined.
- In another bowl, combine the flour, baking soda, salt and pecan meal.
- Gently add the dry ingredients to the wet mixture, being careful not to overmix (some clumps are okay :) ).
- Finally, fold in blueberries and farm fresh pecan pieces.
- Pour batter into a buttered 9” x 5” loaf pan. Check doneness after 55 minutes. The loaf is done when a toothpick comes out clean after inserted into the middle of the loaf.
- If you’d like, mix up the icing, remove bread from loaf pan once cool and pour icing over loaf.
