Recipe:

  • 3 eggs
  • 1 cup raisins
  • 1 teaspoon vanilla
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 1/2 cup farm fresh pecan meal
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 2 cups old fashioned oats
  • 3/4 cup farm fresh medium pecan pieces

Directions:

  1. Combine eggs , raisins and vanilla and let stand, covered, for 1 hour (highly recommend placing in the refrigerator).
  1. Preheat oven to 350*F.
  2. Cream together butter, brown and white sugar.
  3. To the butter mixture, mix in flour, pecan meal, salt, cinnamon and baking soda.
  4. Blend in egg mixture, oatmeal and pecan pieces.
  5. Drop by cookie scoops on a greased cookie sheet.
  6. Bake for 10-12 minutes, or until browned.
