Recipe:
- 3 eggs
- 1 cup raisins
- 1 teaspoon vanilla
- 1 cup butter
- 1 cup brown sugar
- 1 cup white sugar
- 2 cups all-purpose flour
- 1/2 cup farm fresh pecan meal
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 2 cups old fashioned oats
- 3/4 cup farm fresh medium pecan pieces
Directions:
- Combine eggs , raisins and vanilla and let stand, covered, for 1 hour (highly recommend placing in the refrigerator).
- Preheat oven to 350*F.
- Cream together butter, brown and white sugar.
- To the butter mixture, mix in flour, pecan meal, salt, cinnamon and baking soda.
- Blend in egg mixture, oatmeal and pecan pieces.
- Drop by cookie scoops on a greased cookie sheet.
- Bake for 10-12 minutes, or until browned.
- Enjoy warm, or freeze in an airtight container for up to 3 months.
